Blogging Challenge (Catch-Up) Janaury 19: Healthy Desserts

Healthy desserts have been a way of life for me for many years, but I have become even more health-conscious in recent times. It’s not good enough for them to be “low-calorie.” They need to be made with quality ingredients, and it just so happens I recently made such a dessert.

You are looking at Vegan Dark Chocolate Almond Butter Cups. Now, the recipe is here. But I did make a few alterations. I ran out of semisweet chocolate and mixed in unsweetened chocolate and a few dark chocolate chips. Instead of using coconut sugar, I used monk fruit sweetener. Other than that, everything else is the same.

To say I LOVE these is an understatement! And these are also the result of my first ever “self date.” That’s right! I’m involved with a course right now from Paul Greene and Kate Austin, where we are encouraged to date ourselves. I never thought this was for me, but oh, I was wrong!
