Breakfast is easily my favorite meal of the day. And as I have become healthier, I have diversified my breakfast offerings. I do appreciate variety, but by far, my favorite breakfast is overnight cereal. (Notice I didn’t say oatmeal.) I have tried a wide variety of overnight cereals.
Yes, there is the standard overnight oatmeal. But did you know you could also do overnight steel cut oats, overnight barley, and overnight buckwheat? Here’s what I do.
I add about a quarter cup of the grain. I add some flaxseed/chia seed mixture. I add almond milk to cover the grains well. Then I can add fresh apples, pumpkin puree, dried fruit, etc. I then mix it and cover it well.
When I pull out the bowl in the morning, the grains have soaked up the milk. I can add sweeteners, thawed berries, peanut butter, pistachio nuts, etc. I can also heat the cereal if I don’t want to eat it cold.
My favorite thing about this breakfast is that I don’t have to cook the cereal!! I regularly burn the cereal, or I just get impatient. Doing it overnight takes care of all this!

I crave fruit in the mornings so I try to have on hand fresh, cut-up fruit. Lately I’ve been cutting up red grapefruit and orange sections and top that off with pomegranates. It’s so refreshing. I seed the pomegranates myself and it makes a big mess. Pomegranate juice flies everywhere but it’s worth it. Your breakfast looks yummy. I’m going to give it a try. [I tried posting this before but I guess I hit the wrong button.]
