Blogging Challenge January 10: Happy, Healthy Plate

Over the past year, I have altered my entire way of eating. I eat very little sugar, and I have even decided to eat a more vegetarian diet. I rarely eat meat, but I will almost always eat seafood. It has made a massive difference in my typical food diet.

Vegetarian burgers are the BOMB! I could probably eat them every day. They have improved these foods’ quality because I didn’t use to be a fan of vegetarian burgers.

You can never go wrong with PASTA!

My love for fruit has been ignited!

I could list so many more meals, but I figured this was enough to get started.

    I’m trying to move away from the red meat and chicken dinners too. During the colder months I like to try soups – this weekend I made a bean and escarole soup. My mother used to make that when I was young and I wouldn’t go near it! There are so many ways you can make soup. Pasta is a favorite in my family. I like making clams or shrimp with pasta. Or cook it with vegetables – pasta primavera. It’s just coming up with the ideas. I like to cook in bigger batches over the weekend so that we have several dinners ready for the weekday. After working all day I just don’t have much energy to cook and I always appreciate having a dinner that just needs to be warmed up. I find, too, that dishes like soup or stews can get gain flavor after a day or two. Happy cooking!

    I love platters especially fruit platters and savoury players but l enjoy fruit platters a lot more
