I am always happy when  company contacts me to review their healthy, easy-to-make products, and Allens certainly fits the bill.  They sent me some of their products in return for my honest opinion–which I will share with you.

I don’t know about you, but the summer can be a time when unhealthy foods run rampant.  We tend to fill up on foods that are full of sugar and unhealthy carbohydrates.  Sometimes french fries and corn on the cob (smothered in butter) are the only vegetables we eat.

I’m going to be honest.  I have seen this product for years and always wondered what to do with it.  I am happy to report to you that although I have not yet tried this particular recipe, it looks and sounds really good.  Barbecued Veg-All Burgers sounds like something that would really work well this summer.  What better way to make those hamburgers healthier?

I think these look good, and this is something I might just whip up on a hot, summer night.

You might be wondering if I actually tried the samples I was sent, and the answer is in the affirmative!  Last night, I made up an original recipe with two of their products–Black-Eyed Peas and Corn.  I even have a picture.

Black Eyed Pea Corn Salad

This is what I would call Black-Eyed Pea Corn Salad.  I took a can of each (I had received both from Allens for review), and then I added some sun-dried tomatoes, pepperoni, cilantro, and feta cheese.  I was trying to use up some things we had on hand.  I then put this over lettuce with some salad dressing.  We were having pork for dinner, and my mom had the idea to cut this up and put it in the salad as well.  My mom and I both loved this salad, and we plan to make it again for an upcoming picnic!  I think it is very versatile, and nothing could be easier than opening two cans!  My daughter got to eat most of the other can of corn since she doesn’t like salad.
